Amarone is exclusively produced from the Corvina, Molinara and Rondinella grape varieties. the grapes are dried or raisined in cool, dry, well ventilated "drying rooms' or 'drying lodges.' This causes the grapes to partially shrivel and dehydrate, thus increasing the sugar in the juice and concentrating the flavour components. Although this wine is fermented to a complete dryness and usually aged in oak, the richness gives a slightly sweet impression on the palate. Amarone is among the fullest bodied of Italy's red wines, with plenty of ripe black fruit flavours. This full rich styling suggests serving with hard well-aged cheeses (cheddar, parmesan and blue cheeses) with fresh breads, rich winter stews, braised meats, leg of lamb, dark chocolate, polenta dishes, spicy sausages, and rich lasagna dishes.

Expect licorice, coffee, cedar and blackberry aromas that carry through to the palate. The Wine:
The winemaker's of France have known for centuries that blended wines combine the strengths of each varietal resulting in a superior wine than what each varietal could create on its own. In this superb red, Grenache, Syrah and Mourvedre come together to create a rich full-bodied wine boasting an intricate collection of flavours. Its full nose has generous cherry, plum and blackberry aromas with toasty vanilla undertones and a dash of white pepper. The Wine:
Carménère, once thought to be Merlot, until growers started noticing different growing and ripening stages in some of the vineyards, was discovered through DNA fingerprinting in 1994. Carménère, one of the grapes of Bordeaux, France was difficult to bring into full ripeness in France’s cooler climate and has since been removed; however, in Chile’s warmer climate it is thriving. Expect the charm of Merlot and the structure of Cabernet Sauvignon. Flavours of blackberry, cocoa, tobacco, currant, plum and cherry will dominate the palate. Carménère is quickly becoming the signature grape of Chile.

Tres Tinto is Spanish for “Three Reds” and what better three reds to showcase than the traditional blend of Cabernet Sauvignon, Cabernet Franc and Merlot. Cabernet Sauvignon is a consistent top performer in Chile and provides the structure, depth of flavour, and moderate tannins desired for ageability. The Cabernet Franc lifts the aromatics and brings forward a display of spice notes. The Merlot rounds out the blend by providing a soft, silky charm to the palate. The blend of these three varietals will develop aromas and flavours of black currant, blackberry, red fruit, black pepper, herbal, tobacco and plum notes.

The Region:
South Africa is one of the world’s top ten wine producers and has a long history of wine making dating back to the mid to late 1600’s. The coastal region of Swartland, with it’s vistas of golden wheat fields, yellow canola, olive groves and green vineyards, is located just north of Cape Town. The diverse microclimates and soils provide perfect growing conditions for many agricultural crops. The warm Mediterranean-like climate is moderated by the Atlantic and Indian Oceans.
The Wine:
Developed in 1925, Pinotage is a cross of Pinot Noir and Cinsault, the latter being known as Hermitage in South Africa, hence the name. This full-bodied red wine shows good depth of flavour, with an elegant and velvety texture. Fruit-forward aromas and flavours of red fruits, cherry, blackberry and plum will dominate. Through subtle oak aging, notes of cedar, spice and cocoa will develop.
The Food:
The smooth, soft approach makes this a perfect wine for casual sipping, yet there is enough structure to accompany a wide range of food items. Serve with grilled steaks, beef bourguignon, hearty winter bean soups, ratatouille, grilled tuna steaks, shredded pork risotto, grilled lamb and meat pies.
